Tiffin Sambar

Ingredients-1
1 cup Toor dal

Ingredients-2
1 cup Baby onions
1 no Tomato
1 tsp Turmeric powder
1 tsp Chilli powder

Ingredients-3
25 g Tamarind
1 cup Coriander leaves (finely chopped)
2 strands Curry leaves

Ingredients-4
1 tsp Fenugreek seeds
1 tsp Cumin seeds
1 tsp Black pepper corns
2 nos Red chillies
1 tsp Bengal gram

Ingredients-5
1 tsp Asafoetida
2 nos Dry red chili
3 tbsp Oil
1 tsp Mustard

Instructions
1.Seperately fry the ingredients in Group 4 and dry grind.
2.Cook daal and Group 2 ingredient separately in a pressure cooker.
3. Smash the cooked dal. Now add to it the Group 2 and Group 4 ingredients,tamarind pulp,salt, coriander and curry leaves.
4.Temper it with Group 5 ingredients.
5.Boil sambar for 5 minutes in medium flame and serve hot.

Cooking tips:

1. Cook dal in two cups water.
2. Soak tamarind in 1/2cup water and strain the pulp.
3. Add a tsp of salt or according to taste.

4. Add a piece of solid brown sugar (vellam) to sweeten

Palak Chappathi

This is a lovely item, all would like to eat!

Ingredients:

Chappathi flour (wheat) 2 cups, 50 grams Palak leaves, cleaned, Salt to taste. Oil as needed.

Procedure:

Kneed the Chappathi flour with water and salt. Grind the Palak leaves, and pour the mixture into the kneeded flour and kneed again. If you mix it all at once, the flour become very soggy.

Now make small rounds, and roll it into chappathi's and toast it (both sides) on a tava with little oil.

Serve with Coconut Chutney or Jam.

Above quantity mentioned would give 10 Palak Chappathi's.

Dal Fried Rice

Very easy to make and kids love it and very healthy too. You can cook in no time!

Ingredients:

Two cups of rice, 1 cup of mixed Daal or Grains... (mostly for your taste), frying onions 3, tomatoes 2, little piece of ginger, garlic and green chillis. Salt to taste. Oil - few spoons. This would serve for 4 in a family. You can have curd with onions as pachidi or any chutney.

Procedure:

First, clean the Rice and Daal together and cook it for 2 whistles, with 1 to 2 water. 3 cups to 6 cups. So you have to use a big cooker.

Now in a big Kadai, fry the onions, with mustard and little jeera, once it is golden brown, add the cut tomatoes, and stir fry.

Now mix with the cooked Rice and Daal mix, and simmer on stove for 3 minutes.

The Dal Fried Rice is ready. You can also garnish with Coconut scrap or Coriander.

If you use Rajma, instead of Daal, you have to cook it separate for long to make it soft.

This is different from the typical Daal Saatham. Daal Rice. :-)
