Tiffin Sambar

Ingredients-1
1 cup Toor dal

Ingredients-2
1 cup Baby onions
1 no Tomato
1 tsp Turmeric powder
1 tsp Chilli powder

Ingredients-3
25 g Tamarind
1 cup Coriander leaves (finely chopped)
2 strands Curry leaves

Ingredients-4
1 tsp Fenugreek seeds
1 tsp Cumin seeds
1 tsp Black pepper corns
2 nos Red chillies
1 tsp Bengal gram

Ingredients-5
1 tsp Asafoetida
2 nos Dry red chili
3 tbsp Oil
1 tsp Mustard

Instructions
1.Seperately fry the ingredients in Group 4 and dry grind.
2.Cook daal and Group 2 ingredient separately in a pressure cooker.
3. Smash the cooked dal. Now add to it the Group 2 and Group 4 ingredients,tamarind pulp,salt, coriander and curry leaves.
4.Temper it with Group 5 ingredients.
5.Boil sambar for 5 minutes in medium flame and serve hot.

Cooking tips:

1. Cook dal in two cups water.
2. Soak tamarind in 1/2cup water and strain the pulp.
3. Add a tsp of salt or according to taste.

4. Add a piece of solid brown sugar (vellam) to sweeten

Palak Chappathi

This is a lovely item, all would like to eat!

Ingredients:

Chappathi flour (wheat) 2 cups, 50 grams Palak leaves, cleaned, Salt to taste. Oil as needed.

Procedure:

Kneed the Chappathi flour with water and salt. Grind the Palak leaves, and pour the mixture into the kneeded flour and kneed again. If you mix it all at once, the flour become very soggy.

Now make small rounds, and roll it into chappathi's and toast it (both sides) on a tava with little oil.

Serve with Coconut Chutney or Jam.

Above quantity mentioned would give 10 Palak Chappathi's.

Dal Fried Rice

Very easy to make and kids love it and very healthy too. You can cook in no time!

Ingredients:

Two cups of rice, 1 cup of mixed Daal or Grains... (mostly for your taste), frying onions 3, tomatoes 2, little piece of ginger, garlic and green chillis. Salt to taste. Oil - few spoons. This would serve for 4 in a family. You can have curd with onions as pachidi or any chutney.

Procedure:

First, clean the Rice and Daal together and cook it for 2 whistles, with 1 to 2 water. 3 cups to 6 cups. So you have to use a big cooker.

Now in a big Kadai, fry the onions, with mustard and little jeera, once it is golden brown, add the cut tomatoes, and stir fry.

Now mix with the cooked Rice and Daal mix, and simmer on stove for 3 minutes.

The Dal Fried Rice is ready. You can also garnish with Coconut scrap or Coriander.

If you use Rajma, instead of Daal, you have to cook it separate for long to make it soft.

This is different from the typical Daal Saatham. Daal Rice. :-)

Rava Kesari/Laddus

Ingredients: Sooji (Coarse), Sugar in equal quantity (500 gms). Kismis. Cashew 100 gms each. Ghee 100 gms. Little Cardamom.

First put a part of ghee and toast the Rava to golden brown.

Then toast the Cashew and keep aside. Heat dry the Cardamom, and take the seeds out and mix with the Rava.

Have the Sugar powdered in a mixi.

To make Kesari:

Then put the sugar with 2 parts of water, and boil it to perfection. See Bubbles?

Then pour the Rava and stir it to Halwa level, keep stirring. Add the Cashews and Kismis. Mix well.

Stop the stove.

To Make Laddus:

Pour the heated Ghee on the Rava and Powdered Sugar and stir it.

Now the mixture will be in a semi solid state, and after it cools for 10 minutes, with courage, roll it to balls, of equal size. You will get 50 laddus easily. Kids like it!

Chappathi Dosa

Chappathi Dosa is one of the urgent items you can cook, when something is needed fast.
 
All you need is wheat flour (maida is OK too). No mix it with 1 to 2 cups of water, to get a guiy soft batter.
 
Pour it on pancake maker and add some oil (1/2 tbsp). Fry on both sides to crispy brown.
 
Serve with Sauce or some chutney. Onions on top on Dosa is an added flavour. Add sugar/jaggery to get a sweet American Pancake.

Ragi Puttu

Ragi is staple is South Canara and the best source of Iron and minerals.
 
Now how to make Ragi puttu?
 
Grind the cleaned Ragi to perfection of powder and mix with water to have it in a solid state.
Mix grated cocunut.
Steam it for 5 minutes (1 bowl) in Idli maker.
Mix sugar or jaggery and serve.
Wonderful Breakfast or Snack.
 
Ragi Mudhe (semi solid cooked Ragi flour with oil) is also the best food, with pickle and dal. Non Veg eaters relish this.

Best diet for a day to loose weight and stay trim

I got this one from my close friend. Surefire way to loose some decent weight. Dont crib that this is strvation diet :-). There are people in some parts of the world who dont have food to eat!
 
Running is the best all over fat burner. If you do not like running, have breathing problems or cannot run, you can walk at an incline. For example if you walk on a treadmill at 4 mph at 10 incline for 45 minutes, you have burned 500 calories. Eat mostly fruits, vegetables, and protiens. Try to cut back on sugar or not eat anything full of sugar such as candy, cookies, etc but natural sugars (found in fruit) are fine. Here is a meal plan that will help you lose weight fast and not be too hard to follow:

BREAKFAST
1/2 grapefruit
2 egg whites
slice of whole wheat toast

LUNCH
pear
banana
Fiber One bar
salad with little dressing
celery with peanut butter

DINNER
breaded and baked fish (any kind you like) or chicken
peas or any kind of vegetable
brown rice

SNACKS
cottage cheese
fruit
vegetables
protien shake (one scoop protien powder, nonfat milk, frozen fruit)


Also make sure you drink enough water. Drink one glass on nonfat skim milk a day or have it in a shake and then drink NOTHING but water. Take your weight and divide it by 2. The convert pounds to ounces. For example, if you weighed 150 lbs then divide by 2 = 75 lbs then convert to ounces - 75 ounces of water a day. Make sure to drink that much water every day.

Tropical Fish and dishes

Tropical Fish and dishes are easy to make, We call them Dam fishes.
 
It doesnt take a lot of effort to make the dish.
 
Unlike sea fish, which smells a lot, needs lots of ingredients to cook.
 
I will post some recipes, in next few days.
 
First remember, cooking needs lots of patience and you need to cut the fish accordingly.
 
Stay away from frying fish, as you will get half carbon only.
